Bar and butchery opening in Leith

Chop HouseA steak house is opening in Leith next month and will butcher and dry-age its meat on site.

The Chop House in Constitution Street is the latest addition to the area’s growing reputation as a food and drink destination.

This new venture is by the company behind Edinburgh bar and restaurants Sygn, The West Room and Monteiths.

Murray Ainslie, operations and development manager, said their main focus would be on using quality British beef.

“We have imported unique dry-ageing fridges and will be using Himalayan salt to maximise the dry-ageing process,” he said.

“The dry-ageing breaks down the enzymes in the beef and makes for a much more flavoursome and tender piece of meat.

“We are going to be cooking over an open-flame charcoal grill. So the meat will be infused with a subtle smoky flavour.”

The company has also team up with Glasgow brewery Drygate to serve a for the launch.

“This is our first move outside the city centre and we are really excited about moving to Leith,” Murray said.
